Sunday Brunch: African Style

Jollof Rice,Plantain,Chicken and a side salad 


Ingredients    Serves 5 people

4 cups Basmati rice
1 lemon
2 onions chopped
2 tomatoes chopped
1 plantain
5 chicken drumsticks
1 thyme sprig
2 bay leaves
2 tsp ground cumin
2 tsp ground tumeric
 2 tsp cayenne pepper
 2 tsp paparika

Method

1.Chop up tomatoes and onions. Blend tomatoes for Jollof rice and let onions brown in a pot.

2. When you have poured in the blended tomatoes add the spices: thyme,bay leaf,ground cumin,ground tumeric, cayenne pepper and paparika.

3.When you have done all this flavour your five chicken drumsticks.

4.Wash your chicken with lemon juice and water.

5. Flavour it with honey,mustard,thyme,salt,paparika,chilli flakes and garlic cloves.

6.After flavouring the chicken put in the fridge for about 30 minutes.

7.Add rice into the tomato and onion mixutre that has been in the pot for about 15-20 minutes.

8. Start making the side salad which consists of lettuce,tomatoes and carrots.

9. The water in the jollof rice should start drying up but if the rice is still hard add some water.

10. bring the chicken out of the fridge and fry in olive oil on both sides until brown and then put into the oven.The oven should be on about 180-200c.

11. Check the rice and once it is dry and soft it is ready. The chicken should be browned and make sure there is no more blood.

12. Go ahead and fry the plantain in olive oil and once it is light brown on both sides it is ready.

13. The Jollof rice,chicken drumsticks, plantain and side salad are now ready.

14.Serve and Enjoy

after adding spices to the chicken put into the fridge for about 30 minutes.

carrots

put salad in a bowl adding the vegetables one after the other

the water in the jollof rice  should start drying up if the rice is still hard add some water


fry chicken in olive oil until brown and then put into the oven
