Banana bread Rams style

Super tasty and pairs well with a cup of tea :)

serves:12  cook time: about 1 hr 15mins

Ingredients

2 ripe bananas
1 teaspoon lemon juice
1 cup plain flour
a few sprinkles of cinnamon
a pinch of salt
1/2 teaspoon baking powder
a few walnuts (optional)
1 teaspoon vegetable oil
1/2 cup of sugar
1 egg
1 and a half tablespoon coconut milk

Method

1) Set oven to 180c. Mash bananas in a bowl until slightly smooth and add lemon juice. Then set aside. In another bowl put flour,cinnamon,salt,baking powder,walnuts,sugar and egg.

2) Mix oil and milk together in a little cup and add to flour mixture. Then add mashed bananas and mix everything up until well combined.

3) Grease a loaf tin with a little oil or butter making sure to coat all the edges to avoid bread from sticking.

4) Add mixture into loaf tin and top with walnuts. Bake for about 45 minutes.

Check by inserting a knife into bread if it comes out clean it is ready. If not leave it for an additional 5 to 10 minutes.

Let cool before for about 7 minutes before cutting into slices and enjoy :)
