Herb-crusted Fish

Ingredients
  • 2 Fish fillets 
  •  2 Garlic cloves, crushed
  • Butter melted
  • 1 tbsp fresh Basil chopped
  • Lemon zest grated 
  • 2 slices of toast, grated (breadcrumbs)
  • salt
  • pepper
Method

1. Heat oven to 200.c. Place the fish on a large greased baking tray and season with salt and freshly ground black pepper.

2. Combine the breadcrumbs,garlic,lemon zest and herbs, and season well. Pour in the butter and mix with a fork or your fingers, until combined.
Cover the fillets with the crumbs,pressing down on each.

3. Transfer to the oven and roast for about 20 minutes, or until crust is golden.
