Coq au vin

Ingredients

1 tbsp butter
2 tbsp olive oil
4 chicken pieces
4 pieces of smoked bacon, cut into strips
2 onions
2 carrots diced
4 mushrooms halved
2 cups red wine
1tbsp tomato paste
1 cup chicken stock made using 2 chicken knorr cubes
2 tbsp plain flour
salt and pepper

1. In a Ziploc bag put 2 tbsp of flour, thyme, salt and pepper. Add the chicken pieces and leave for 5-10 minutes.

2.Brown the chicken pieces in olive oil for 3 minutes on each side

3.Take the chicken pieces out and put them into a plate. cut 4 pieces of bacon into squares and fry.

4.While the bacon is frying chop up onions and carrots.

5. Add the chopped onions and carrots to the bacon.

6. Once the onions, carrots and bacon are fried add in a cup of red wine.

7.Once the wine has been added add in a tbsp of tomato paste

8. Add the remaining red wine and create your chicken stock

9. You can create the chicken stock by adding boiling water to 2 maggi knorr cubes.

10. Once you have added the chicken stock put the chicken pieces into the pot and leave for 10 mins

11. Once the 10 mins is over put the dish in the oven for 1hr on 350c
12. Fry the chopped mushrooms and add to the top of the cooked dish.

13. Mix 2 tsp flour and butter together and add to the coq au vin

14. Add some salt, pepper and serve.
