Asaro- Yam Porridge


I know I haven't posted in a while but I am back. Asaro is a hearty African dish made with yam and blended peppers. It is a traditional Yoruba dish and seeing as I am Yoruba I thought why not.

Ingredients 

serves: 1 prep time: 20 mins cook time: 25-30 mins

1/2 a tuber of yam
1 onion , chopped
1 red pepper, chopped
2 tomatoes, chopped
1 scotch bonnet pepper. chopped
1 garlic cloves
1/2 ginger, chopped
1 knoor cube
3-4 cups water
2 tablespoons palm oil
2 tablespoons olive oil

Method

1) Rinse yam and cut into thick rounds.

2) Peel outer skin of yam.

3) Cut into cubes and rinse in cold water.

4) Change cold water and leave cubed yams in to avoid them changing colour. Leave for about 5-7 mins.

5) Heat a pot on a medium heat. Cut up onion,pepper,tomatoes,scotch bonnets,garlic and ginger. Add 3-4 cups water and blend.

6) Add 2 tbsp of olive oil and palm oil to pot. Add blended peppers etc. Cover and leave to boil on medium heat for 10-12 mins.

7) Add knoor and curry powder seasoning and stir. Let boil for 5 mins on a medium heat and then add in cubed yam.

8) You can add in dried crayfish or cooked meat/chicken pieces.

9) Stir and cook for 20-25 mins or until yam is tender.

10) You can mash if you want but I prefer mine with yam chunks so I skip this step.

11) All done. Asaro is now ready. Enjoy
