Almond Spinach Pesto Lamb

Ingredients

4 pieces of lamb chops
1 teaspoon  salt
1teaspoon sugar
1/2 onion, chopped
2 handfuls of spinach
11/2 handfuls of almonds
2 tablespoon olive oil
2 teaspoons paprika
2 tablespoon garam masala
1 teaspoon chilli powder
2 cloves of garlic, chopped
1/2 fresh chilli, chopped
Oil for frying

 This dish is a Moroccan meets Italian with almonds added.

1) Flavour the lamb chops with salt,sugar,chopped onion,paprika,garam masala, chilli powder and the garlic in a big bowl.
Blend the spinach and almonds with 2 tablespoons of olive oil.

2)Once blended add half the almond spinach pesto to the lamb chops and stir. Making sure to refrigerate the other half.

3)Put in the fridge overnight or for about 3 - 4 hours but overnight is best as it lets the lamb chops take in all the flavours.

4) Take out of the fridge and add fresh chilli slices and the leftover almond spinach pesto as well.

5) Leave for 5 to 10 mins and then stir.

6) Put some oil in a frying pan and leave to heat for about 4 mins

7) Add in the lamb chops and let fry on each side for about 7 mins on a medium/low heat.

8) Serve and Enjoy

Can be had with a salad or roast potates :)
