Plantain Tapas Style Recipe


4 cabbage leaves
1 plantain, sliced 
1/2 chicken breast diced 
1 carrot, sliced 
1/2 onion, chopped 
1/2 sweet green pepper or red pepper, chopped
1 teaspoon salt
1 teasspoon soy sauce
a squeeze of tomato puree
1 teaspoon chilli pepper
1/2 tin chopped tomatoes

Directions
Start by making sauce for the wrap.
1) Chop up the chicken breast and fry in a little olive oil for about 8 mins on a medium to low heat until slightly brown.
 Then add in the chopped up carrot,onion and green pepper with a little bit more olive oil for 5-7 mins. Once the chicken breast and vegetables are slighty brown add in the 1/2 tin of chopped tomatoes. Add salt,pepper,soy sauce and a squeeze of tomato puree to taste. Leave on a medium to low heat till it starts to bubble. Make sure to keep tasting and add salt and pepper according to your preference. 

2) Peel plantain and cut into slices. Fry on a medium heat for 5 -8 mins and make sure to turn to the other side and fry for another 5 mins until golden brown and slightly crispy.

3) Cut cabbage into slices making sure you have about 4 slices and lay on the plate 

4) Put 2-3 plantains on the cabbage wrap and add the tomato sauce unto the plantains
